| So what makes Sabina so special for the production of olive oil? The first attribute is the Sabina landscape. Sabina can be divided into two main areas - low Sabina and high Sabina. High Sabina produces the highest quality olive oil, mainly due to extreme steepness and limestone composition of the hills on which the olive trees grow. It is these two factors combined which create excellent drainage for the plants, giving the olives their intense flavour. | The way in which Sabina olive oil is produced, is also a critical element of creating such a high quality olive oil. As the hillsides are so steep, they prevent the use of any intensive machinery to collect the olives, meaning the olives must be hand-picked. This is the best way to harvest olives, in order to avoid any bruising or damage to the fruit. The olives are taken to the mill within 24 hours, producing extra virgin olive oil with excellent organoleptic properties. | The main olive varieties used to produce Sabina olive oil are Carboncella, Frantoio and Leccino. Perhaps one of the most important features of Sabina is the prevalence of small producers in the area. The olive oil production is central to the way of life, with many families having their own olive groves.
